Situated just outside of Beaune, Emmanuel Giboulot has worked on an organic basis under biodynamic methods since 1986. The vineyards represent 10 hectares and are scattered over 12 plots between Côte de Nuits and Côte de Beaune, including the lieu-dits of La Grande Chatelaine and Combe d’Eve. Emmanuel, who took the reins of the estate in 1985, is always in search of quality, integrity, and respect for the natural typicity of the grapes. He uses only natural indigenous yeasts, and the use of SO2 is carefully adapted to each particular wine.
