Before the fruity cherry notes hit the palate, you are confronted with intriguing, dusky bitterness, the kind of taste that drives the best amaros. Cerasum, a new cherry liqueur, made in the United States by Don Ciccio & Figli from Michigan cherries and blossoms from Virginia, plus assorted herbs like juniper, is based on an old Italian recipe. It’s not sweet. I prefer it as a mixer rather than as a straight drink.
